Grilled Salmon


What you need:
Salmon (wild caught if possible)
Marinade:
2 cups of coconut milk
3-4 tablespoons of soy sauce 
1/2 lemon juice 
1 inch of ginger (chopped)
2 sprigs of thai basil (chopped) 
2 cloves of garlic (chopped

Combined the marinade ingredients in a ziplock bag or shallow dish
add the salmon and let sit in refrigerator  for at least a half hour.  



Heat your grill to medium - high heat 
Place the salmon skin side down
depending on how thick your salmon is cook it between 4-7 minutes 
Flip then cook another 4-7 minutes 
Make sure you don't over cook your salmon! 


I served my grilled salmon with a nice spinach salad
so good! enjoy!

Paleo Pizza

Here is the crust:
1 cup of almond meal (I use the Trader Joe's brand)
1 egg
1 tablespoon of olive oil
1 pinch of salt
1 teaspoon of baking power
You can leave your crust just like this or add in your favorite dried herbs
I added
a pinch of oregano, basil and garlic power
If your dough feels a little sticky, don't be afraid to add more almond meal
press or roll out the dough on a cookie sheet
Pre-bake the crust for 3-5 min at 400 degrees 



For the toppings:
You can add your favorite meats and vegetables, for this pizza I added
 mushrooms 
spinach
red onion
scallions 
homemade pesto
cooked bacon
roasted red pepers 
artichoke hearts 
marinara sauce

Add your topping to your pre-baked crust, and bake for another 7 minuts 
or until desired doneness 

  
Transfer to a plate, cut and serve

Spinach, Chicken and Bacon Salad


Grab a couple handfulls of spinach 
2 grilled chicken breasts 
6 baked strips of bacon 
2 scallions 
5 mushrooms (sliced) 
Topped with my homemade salad dressing 

You can always add whatever you want to this salad
It's really filling, and tases amazing!
Enjoy
