Roasted Acorn Squash

What you will need:
1 Acorn squash 
A few Tbs. of good quality maple syrup
2 Tbs. of grass fed butter or Ghee
Pinch of salt


What to do:
Preheat your oven to 400° F
Cut the acorn squash in half and scoop out the seeds and goop 
Score the inside of the squash a few times (so the butter and syrup can melt in to the squash)
Place both haves on to a baking sheet and add some water just to cove the bottom of the pan 



Next:
Depending on how sweet you want you squash, drizzle a few Tbs. (or more) of maple syrup on to both sides of the squash and place one Tbs. of butter in each of the squash holes, then sprinkle one pinch of salt on to each of the halves 



Place in the oven for about one hour, or until its golden brown and test consistency with fork 
(the first time I made this, I sprinkled a little bit of cinnimon over it right after it came out of the oven. It tasted like pumpkin pie!)
