Stuffed Pork Tenderloin

What you need:
Pork Tenderloin
1 Red Bell Pepper (or roasted red peppers in a jar)
1/2 small red onion
1 large handful of baby spinach 
2 cloves of garlic
olive oil 
salt and pepper
wooden skewers or kitchen twine


What to do:
Dice up the red bell pepper, red onion, and garlic


Then:
Heat up a few tbs. of olive oil in a pan and sauté the red pepper, red onion, and garlic; 
add in some salt and pepper (just a dash of both)
Cook until the onions are translucent, then add in the spinach until wilted
Let cool completely


Next:
Preheat the oven to 375º
Take the pork tenderloin and cut down the middle (butterfly them) but do not cut all the way through
Then lay plastic wrap over them and take a meat tenderizer (the smooth side) and level the meat out so it is all the same thickness 


Take the cooled mixture and spread throughout the middle, make sure not to over stuff them
Carefully thread the skewer through the meat to seal everything up


Place the tenderloin on a baking sheet and bake for 45 min or until a meat thermometer reads 170º
Slice and enjoy!

Paleo Sloppy Joes

My sloppy joes don't have sugar added and I don't use a bun, but trust me you won't be missing anything!! This dinner is so fast and easy! I made mine in under 15 minutes from start to finish

What you need:
Olive oil
Ground beef (I use 85% lean)
1 yelow onion
1 can of diced tomatoes
2 tbs of tomato paste
a few dashes of worcestershire sauce
Chili powder
Garlic powder
Coriander
Oregano 
Cumin
Salt and pepper
All-purpose seasoning (something like Mrs. Dash)


What to do:
Start by browning the meat in a pan on med-high heat
add in spices (I typically do not precisely measure the spices, just to desired taste) along with worcestershire sauce 
When the meat is almost done cooking, add in the large diced onion, diced tomatoes and tomato paste 
Simmer for 5 min.

Sweet Potato Fries

Sweet Potato Fries pair perfectly with a burger, or in place of the normal non-paleo potato chips.
This recipe can be converted into a single portion or to feed a crowd 

What you need:
3 sweet potatoes and or yams 
olive oil
salt 
Baking sheet

Optional:
Paprika 
Garlic Powder
Chili Powder
Black Pepper

What to do:
Preheat the oven to 400º
Cut off the ends of the sweet potatoes/yams, then peel them with a knife or potato peeler
Very carefully (with a really sharp knife) cut the sweet potato/yam in 1/4 in. slices, then cut the slices in to 1/4 in. strips


Place on a baking sheet 
Drizzle a few "glugs" of olive oil over the sweet potatoes/yams 
sprinkle your chosen spices over the sweet potatoes/yams


Place in the oven for 10 min 
After 10 min, toss them around and place back in the oven until done (adjusting the oven temperature if necessary)

Taco Seasoning

At our house we have "taco tuesday"
I don't like buying taco seasoning from the store because it has a lot of junk added to it 
so here is my version

This works for 2 lbs of taco meat (ground beef or ground turkey)  

2 Tbs of chili powder 
2 tsp of cumin
1 tsp of paprika 
1/2 tsp of garlic powder
1/2 tsp of dried oregano 
1/2 tsp of sea salt
1/4 tsp of  coriander
a few cracks of black pepper 
a dash of cayenne  pepper (omit this if you want a mild seasoning)
